  1. 1 1/2 pounds beef chuck roast, cut in 1-inch pieces

  2. 1 1/2 pounds pork butt, cut in 1-inch pieces

  3. 1 tablespoon butter

  4. 2 tablespoons vegetable oil

  5. 2 cloves garlic, minced

  6. 2 onions, chopped

  7. 1 or more green chile peppers, seeded,chopped

  8. 2 red bell pepper, chopped

  9. 2 bay leaves

  10. 1 teaspoon dried oregano

  11. 1/2 teaspoon ground cumin

  12. 2 cups tomatoes, chopped

  13. 1/4 cup fresh lemon juice

  14. 3/4 cup raisins

  15. 1 cup whole blanched almonds, optional

  16. 1 teaspoon salt

  17. 1 teaspoon pepper

  18. 1/2 cup dry red wine

  19. 1/2 cup beef stock

  1. Brown beef and pork pieces in butter and oil. Add garlic and onions and cook until onions are tender. In crockpot, combine the browned meat mixture with remaining ingredients. Cover and cook on low 8 to 10 hours, until meat is very tender.

  2. Serve with warm tortillas. This can also be made with all beef or pork.
