  1. 2 small (260g) ripe bananas, mashed

  2. 180ml (3/4 cup) orange juice

  3. 300g (2 cups) self-raising flour

  4. 200g (1 cup) firmly packed brown sugar

  5. 1 egg

  6. 1 egg white

  7. 60g lite milk chocolate, finely chopped

  8. 100g ( 1/2 cup) reduced-fat ricotta

  1. Grease a 15cm x 25cm loaf pan. Combine banana and juice in medium bowl;

  2. mix well. Add sifted flour and sugar, stir in egg, egg white and 3/4 of the chocolate, pour into prepared pan. Bake in moderate oven (180C) 1¼ hours or until bread is cooked when tested. Cool bread in pan 5 minutes, transfer to wire rack; cool. Slice bread, serve with combined remaining chocolate and ricotta.
