  1. 2 tablespoons 30ml Butter or margarine

  2. 1 lb 454g / 16oz Beef - trimmed, cubed

  3. 1 Onion - sliced

  4. 2 Potato - cut in

  5. 1 Carrot - peeled and sliced

  6. 1 Cu cauliflower florets

  7. 1 Cu eggplant - cut in

  8. 1" cubes

  9. 3 Garlic - minced

  10. 2 Green chiles - fresh

  11. 2 tablespoons 30ml Coriander - ground

  12. 1 tablespoon 15ml Chili powder

  13. 1 teaspoon 5ml Ground cumin

  14. 1 teaspoon 5ml Ground ginger

  15. 1 teaspoon 5ml Turmeric

  16. 1 teaspoon 5ml Curry powder - or to taste

  17. 1 tablespoon 15ml Mustard seed

  18. 1/2 cup 118ml White vinegar

  19. 3/4 cup 177ml Coconut milk

  1. To moderately hot butter in large skillet or wok, add onions, garlic, chilies, mustard seeds, curry powder, coriander powder, chili powder, cumin powder, turmeric powder, and ginger. Stir constantly, them lower heat.

  2. Add beef and vegetables; saute until beef is browned , then add diluted coconut milk and vinegar.

  3. Simmer on very low heat until meat is nearly tender. When vegetables and meat are tender, add rice flour mixed with a little water and salt. Add more water if necessary.
