  1. 1 tablespoon canola oil

  2. 1/4 cup onion finely chopped

  3. 1 clove garlic minced, or to taste

  4. 1 teaspoon ginger root finely grated

  5. 1/2 teaspoon curry powder or to taste

  6. 1 pinch salt and black pepper or to taste

  7. 1 pinch cumin ground, or to taste

  8. 2 tablespoons scallions, spring or green onions finely chopped, only green part

  9. 1/2 cup yogurt, plain

  10. 2 teaspoons lemon juice or to taste

  11. 2 tablespoons mint leaves freshly chopped

  1. In a small saucepan, heat up the oil over medium low heat, stir in onion and cook until dark golden, 3 to 5 minutes.

  2. Stir in garlic, ginger, curry powder, salt, pepper and cumin.

  3. Cook and stir for 40 seconds.

  4. Remove from heat, stir in green onions.

  5. Let cool for a minute.

  6. Stir in yogurt, lemon juice, then chopped mint.

  7. Refrigerate before serving.
