  1. 4 fillet steaks

  2. 200g each 8 long slices of lardo or pancetta

  3. 12 freshly shucked oysters

  4. 500ml veal stock

  5. 100ml cognac

  6. Thyme

  7. garlic clove

  8. Wakame seaweed salad (bought)

  9. Shredded pastry (turkish)

  10. wasabi paste

  11. 500ml vegetable oil

  12. Makes 500 g

  13. 500 g white miso paste

  14. 250 ml mirin

  15. cup caster sugar

  1. Miso dressing Combine the ingredients and place the mixture in a glass bowl suspended over a simmering saucepan of water. Leave it to cook for 1/2 hour, until the sugar has completely dissolved.

  2. Allow to cool, then use as a marinade.

  3. The marinade will keep for up to 1 month in the refrigerator if stored In an airtight container. It also freezes really well.
