  2. 1 yeast cake

  3. 1 cup milk, scalded and cooled

  4. 1/4 cup lukewarm water

  5. 1 tablespoon sugar

  6. 4 cups sifted flour

  7. 1/4 cup sugar

  8. 3 tablespoons butter

  9. 1 egg

  10. 1/2 teaspoon lemon extract

  11. 1 teaspoon salt

  1. Dissolve yeast and one tablespoon sugar in the lukewarm liquid.

  2. Add enough flour to make an ordinary sponge, about one and one-half cups.

  3. Beat until perfectly smooth.

  4. Cover and set aside in a warm place to rise for fifty minutes or until light.

  5. Add sugar, creamed butter, beaten egg, lemon extract, salt, and about 2 1/2 cups of flour or enough to make a moderately soft dough.

  6. Knead until smooth and elastic.

  7. Place in greased bowl, cover, and set aside in a warm place to rise until double in bulk--about one hour.

  8. Turn out on board and shape as cloverleaf rolls or any fancy twist.

  9. Let rise until light, about one hour.

  10. Bake at 425 degrees for fifteen minutes.
