  1. 1 lb Lean ground beef

  2. 1/4 c Farina or cream of wheat

  3. 1/4 c Onion, minced

  4. 1 tb Parsley, dried,

  5. 2 tb Parmesan cheese, grated

  6. 1 ea Egg

  7. 2 tb Tomato paste

  8. 2 cn Beef broth

  9. 1 cn Water

  10. 1 c Celery, sliced

  11. 1 c Carrot, sliced

  12. 1 ea Onion, sliced

  1. Servings: 4 Combine ground beef, farina, minced onion, parsley, parmesan cheese, egg and tomato paste.

  2. Form into 12 meatballs.

  3. (Easier if you wet your hands before forming balls.

  4. ) Bring beef broth and water to a boil, add meatballs, celery, carrot and sliced onion.

  5. Cover and simmer for 45 minutes or until vegetables are tender.
