  2. 2 tbsp. olive oil

  3. 2 cups thinly sliced onion

  4. 2 cups thinly sliced red bell pepper

  5. 1 pound uncooked bratwursts

  6. 3 tbsp. minced garlic

  7. 1/2 cup beer(not dark)

  8. 1/2 cup chicken broth

  9. 1 tbsp. paprika

  10. 1 tbsp. chili powder

  11. 6 sourdough rolls, sliced in half lengthwise and lightly toasted

  12. 6 sliced provolone cheese

  13. 1 1/2 cups hot pickled vegetables

  1. Heat the oil in a large skillet over medium heat. Add the onions, bell peppers and bratwurst to the skillet. Cook about 10 minutes until the vegetables are tender and the bratwurst are cooked through, turning occasionally. Add the garlic and cook 2 minutes, stirring frequently. Add the beer and chicken broth and heat to a simmer. Stir in the paprika and chili powder and simmer 3 minutes. Spoon some of the cooked onion and pepper mixture onto the bottom of each roll. Slice each bratwurst lengthwise into 4 pieces. Lay the bratwurst slices over the onion mixture. Top the bratwurst with a slice of provolone and some of the pickled vegetables. Place the top of the roll over and serve immediately.
