  1. 6 large king prawns drizzled with olive oil

  2. pinch of salt

  3. 2 tablespoons olive oil

  4. cup bean sprouts

  5. 8 leaves bok choy

  6. 1 punnet enoki mushrooms

  7. 6 leaves Chinese cabbage

  8. bunch coriander

  9. 1 red capsicum, finely sliced

  10. cup white wine

  11. 1/3 cup soy sauce

  12. 2 cups fish stock

  13. 1 tablespoon grated ginger

  14. cup mirim

  1. Barbecue the prawns for 3 minutes each side, in a very hot wok. Set aside and allow to rest for 2 minutes in a warm area.

  2. Heat 2 tablespoons of olive oil in a hot wok. Cook all remaining ingredients for 2 minutes. Add prawns, mix and serve in a deep serving bowl.
