  1. 4 cups Basmati rice (Can use boiled rice too)

  2. 1 cup mint leaves

  3. 5chillies ( green OR Red Chilli whole)

  4. 6 cloves of garlic

  5. 1 piece of ginger (1 inch)

  6. 1 tsp cumin seeds

  7. 2 Bay leaves

  8. 2 whole cardamom

  9. 1piece of cinnamon (stick)

  10. salt to taste

  11. 1 tbsp Ghee (Clarified Butter)

  12. Tamarind (1/2 the Lemon size)

  13. 2 tsp Channa Dal

  14. 2 tsp Urad Dal

  1. In a pan, add ghee and add ural and channa dal.

  2. When they turn light brown in color, add the chillies and tamarind and saute.

  3. Now add the mint leaves and saute for few min.

  4. Allow the mixture to cool and grind it with salt into a fine paste.

  5. Meanwhile, cook the rice in a rice cooker or pressure cooker. Allow the rice to cool after it is cooked.

  6. In a big pan, add ghee and now add the bay leaf,cardamom,cinnamon and cumin seeds.

  7. Now add cashews and fry till they become light brown. Switch off the stove.

  8. Now add the rice and mix well.

  9. Add the Pudina/Mint mixture and mix well. Add 2 tsp of ghee while mixing.

  10. Check for salt.

  11. This is my traditional way of cooking Mint/Pudina rice/Pulao. There are other ways of doing this too.

  12. This rice is best eaten with chips,Papad or Potato. We had Potato fry,Papad and Mint rice for our dinner last weekend.
