  2. red potatoes , unpeeled and each cut into 1 1/2-inch chunks

  3. 1/4 cup(s) low-fat (1 percent) milk

  4. 1/2 cup(s) (loosely packed)

  5. fresh cilantro leaves and stems , chopped

  6. 1 teaspoon(s) salt

  7. 1 teaspoon(s) grated fresh lime zest

  8. 1/4 teaspoon(s) ground black pepper

  9. 1 container(s) (8 ounces)

  10. plain low-fat yogurt

  1. In 4-quart saucepan, place potatoes and enough water to cover; heat to boiling over high heat. Reduce heat to low; cover and simmer 10 to 12 minutes or until potatoes are fork-tender. Drain.

  2. Return potatoes to saucepan. With potato masher, coarsely mash potatoes. Stir in milk. Add cilantro, salt, lime zest, pepper, and yogurt, and continue to mash until well blended but still lumpy. Heat through if necessary.
