  1. 1 lb Pink beans

  2. 1 sm Can Ortega green chiles,

  3. -chopped

  4. 1 ts Salt

  5. 1 lg Onion, chopped

  6. 3 Cloves garlic,

  7. -minced/pressed

  8. 1/2 ts Chili powder

  9. 4 tb Salsa or to taste

  1. Soak the beans overnight, changing water several times.

  2. Put beans in crock-pot and cover with an inch or so of water.

  3. Add salt, onion, garlic, and chili powder.

  4. Cook on low until beans are soft (about 18 hours? I forget).

  5. When beans are cooked, ladle off and reserve some of the liquid from the top.

  6. Mash the beans well.

  7. (I never do this as well as I'd like; I've tried a potato masher and an empty iced-tea jar.

  8. ) Add reserved liquid as necessary for consistency.

  9. (I never have to add any, myself.

  10. ) Stir in the chopped chiles and the salsa; heat through.
