  1. 150 grams (6 ounces) beef , pounded with a meat hammer and cut in small pieces

  2. 3 spring onions ,

  3. 1/4 inch slices on the bias

  4. 2 cloves garlic , sliced

  5. 16 grams ginger , sliced thinly (a piece about the size of a large olive )

  6. 1 lb broccoli , cut in large pieces

  7. Sauce:

  8. 3Tbsp oyster sauce

  9. 2 tsp dark soy sauce

  10. 1/4 tsp sugar

  11. 3/4 tsp cornstarch

  12. 1 Tbsp rice wine

  13. 1 tsp sesame oil

  14. salt and pepper to taste

  15. 1 Tbsp peanut oil

  1. Combine the sauce ingredients and set aside.

  2. Fill a pot with water, add a Tbsp of salt. Bring to a boil and add the broccoli. Cook the broccoli about 4 minutes and drain.

  3. Heat the wok until smoking hot, add some salt and the peanut oil. When the oil begins to smoke again, add the beef in one layer. Leave it in the pan one minute then turn it over and add the garlic, ginger and onions. Stir-fry until it becomes fragrant and add the sauce ingredients.

  4. Put the broccoli on a plate and place the meat mixture on top or add the broccoli to the wok and mix thoroughly.

  5. Serve.
