  1. 2 pounds sausage, casings removed

  2. 2 cups cubed day old bread

  3. 2 cups grated cheddar cheese

  4. 10 large eggs, lightly beaten

  5. 3 cups whole milk

  6. 1 bunch green onions, trimmed and chopped

  7. 1 teaspoon dry mustard

  8. 1 teaspoon salt

  1. Grease 3-quart casserole; set aside.

  2. In a skillet over medium heat, crumble sausage and cook until brown. Drain on paper towel.

  3. Arrange bread in prepared casserole; sprinkle with cheese.

  4. In a large bowl combine sausage, eggs, milk, green onions, mustard and salt; mix well. Pour over bread; refrigerate overnight.

  5. Preheat oven to 350 °F (175°C).

  6. Bake casserole for 1 hour or until set and golden brown.
