  1. 4 slices prosciutto, pancetta or thin bacon

  2. 1 large (500g) orange sweet potato (kumara)

  3. 200g baby green beans, trimmed

  4. 1/3 cup (80g) marinated mixed olives

  5. 1-2 tablespoons of olive oil

  6. 50g creamy feta, crumbled

  1. Preheat oven-grill to hot. Lay prosciutto on an oven tray. Grill for 2 minutes, turning once, until crisp. Break into large pieces and set aside.

  2. Peel and cut potato into 3cm cubes. Steam with beans in a large saucepan over simmering water for 4-5 minutes until just tender.

  3. Transfer vegetables to a shallow serving dish; add olives and oil; lightly toss to combine. Top with prosciutto and feta. Sprinkle with black pepper. Serve warm.
