  1. 8 Tomatoes (medium)

  2. 1 1/2 cups 219g / 7.7oz Soft bread crumbs

  3. 2 Garlic - minced, up to

  4. 1/2 cup 73g / 2.6oz Grated parmesan cheese

  5. 1/3 cup 48g / 1.7oz Chopped fresh parsley

  6. 1/2 teaspoon 2 1/2ml Salt

  7. 1/4 teaspoon 1 1/3ml Pepper

  8. 1/3 cup 78ml Olive or vegetable oil

  1. Cut a thin slice from the top of each tomato. Scoop out the pulp, leaving a half inch thick shell.

  2. Invert tomatoes onto paper towels to drain.

  3. Meanwhile, in a bowl, combine crumbs, garlic, cheese, parsley, salt and pepper.

  4. Stuff tomatoes; place in greased shallow baking dish.

  5. Drizzle with oil.

  6. Bake, uncovered, at 400F for 15-20 minutes or until stuffing is lightly browned.

  7. Yield: 4-6 servings.

  8. To make into appetizers: Stuff 48 cherry tomatoes with crumb mixture; bake for 8-10 minutes.
