  3. 3/4 cup cold water, divided

  4. Glass of white wine

  5. Sugar

  6. Nutmeg

  1. Beat the egg and mix with it a spoonful of cold water.

  2. Bring the white wine, half a glass of water, sugar, and nutmeg to a boil.

  3. When it boils, slowly add the egg, stirring it well.

  4. Simmer for one minute. Do not let it boil or the egg will curdle.

  5. Serve with toast.

  6. Egg wine may be made as above without warming the egg. It is lighter on the stomach, though not as pleasant to taste.
