  1. 1 undefined rabbit , cut into pieces

  2. 1 undefined carrot

  3. 1 undefined celery stalk

  4. 1 undefined garlic clove

  5. 1 cup(s) bacon , say 100+ gr 1 tablespoon(s) parsley

  6. 1 teaspoon(s) rosemary

  7. 5 tablespoon(s) olive oil

  8. 1 tablespoon(s) flour

  9. 1 dash(es) salt and pepper

  10. 300 ml of meat stock or water

  1. Wash and dry the rabbit pieces. Make a battuto or chopped mixture with the sliced carrot and celery, the garlic, parsley, rosemary and chopped bacon.

  2. In a casserole saute the rabbit in the oil together with the battuto, making sure the rabbit pieces brown well all over. Sprinkle with the flour and with salt and pepper. Add the meat stock (or water) and cover and cook for an hour.

  3. The cooked rabbit can be served with fried potatoes.
