  1. 1 1/2 cups graham cracker crumbs

  2. 1/2 cup all purpose flour

  3. 2 1/2 tsp baking powder

  4. 1 stick Smart Balance® Blended Butter Sticks, room temperature

  5. 3/4 cups sugar

  6. 2 large eggs

  7. 1 tsp vanilla extract

  8. 3/4 cup mini chocolate chips

  9. 1 jar marshmallow fluff

  10. 1/2 stick Smart Balance® Blended Butter Sticks

  11. 3/4 cup confectioner's sugar

  12. 1 tsp vanilla

  13. 3/4 Cup Smart Balance® Fat Free Milk & Omega-

  1. Preheat oven to 350 degrees.

  2. Line standard muffin tin with liners (12-14).

  3. Whisk graham crumbs, flour, and baking powder in medium bowl.

  4. Beat butter and sugar in large bowl until creamy.

  5. Add eggs one at a time, beating into butter and sugar mixture.

  6. Beat in vanilla.

  7. Alternately add graham cracker mixture and milk, beating in between and beginning and ending with graham cracker mix.

  8. Fold in chocolate chips.

  9. Divide battter among muffin cups and bake for 20 minutes, then transfer to cooling rack.

  10. To make icing, beat 1/2 stick of butter until creamy.

  11. Add marshmallow fluff and then slowly add in confectioner's sugar and vanilla, beating until light and fluffy.

  12. Ice cupcakes and top with additional broken graham crackers.
