  1. 500g minced turkey

  2. 2 teaspoons Thai red curry paste

  3. 1 large egg

  4. 2 tablespoons cornflour

  5. 1 lime, zested

  6. 1 small bunch coriander, chopped

  7. 2 spring onions, finely chopped

  8. 1 medium red chilli, de-seeded and diced fresh, or 1/2 dried chilli

  9. 1 tablespoon whey protein powder

  10. low fat cooking spray

  1. Put the minced turkey, red curry paste and about half the egg into a bowl and mix thoroughly. Add the cornflour, zest of lime, coriander, spring onion, chilli and whey protein powder and mix well with your fingers. Add the rest of the egg to bind the mixture.

  2. Divide the mixture into 8 portions then roll each into a ball then flatten slightly to make a burger.

  3. Heat a large frying pan and spray with low fat cooking spray. Turn the heat up high and seal on both sides. Lower the heat and then fry gently (in batches) for about 6 minutes each side until golden and cooked through.
