  1. 220g butter

  2. 130g caster sugar

  3. 4 free range eggs

  4. 220g self-raising flour

  5. 1 banana

  6. 6 squares of plain milk chocolate

  1. Preheat the oven to 180 C / Gas 4.

  2. Mix the butter and sugar until pale and thick. Add in the eggs, mixing in one at a time.

  3. Mix in the flour, folding carefully until fully integrated.

  4. Take a banana and mash it up until it’s a thick, fluffy blob. Add to the mixture and using an electric hand mixer, combine at the highest speed.

  5. Roughly chop the squares of chocolate, and then add to the mix, making sure it is evenly distributed.

  6. Spoon the mixture into muffin cases. I like to add the mixture to just below the top – remember, these are muffins, not cupcakes, so add a little more than usual!

  7. Bake in the preheated oven for 15 minutes.

  8. Check and make sure your muffins are cooked the whole way through by sticking a knife or skewer through it. Because of the banana in the mixture these muffins might not feel “cooked”, but perhaps rather wobbly or gooey – this is what you want! So long as a knife comes out clean, the cakes are ready!

  9. Leave to cool before enjoying with a nice cup of tea :)
