  1. 1 1/2kg (3lb 5oz) small new potatoes, washed

  2. 4tbsp olive oil

  3. 4 cloves garlic, unpeeled and lightly crushed

  4. Coarsely ground sea salt and black pepper

  1. Preheat oven to 190°C/375°F/gas 5. Put the potatoes in a roasting tin, drizzle over the oil and turn to coat them. Put garlic in between the potatoes and sprinkle with salt and pepper.

  2. Roast for about 45 mins, shaking the pan occasionally, until golden and crispy.
