  3. Extra virgin olive oil 12 Cup (8 tbs)

  4. Water 1 Tablespoon (if aioli is too thick)

  5. Chipotle pepper in adobe sauce To Taste , finely minced

  6. Salt To Taste

  8. Chicken wings 20 , separated at the joints

  9. Vegetable oil 1 Cup (16 tbs) (For deep frying (The pan should not be more than 3/4 full))

  10. Fresh coriander 10 Gram , roughly chopped (small handful)

  11. Lime 12 , juiced

  12. Salt and ground black pepper To Taste

  13. Chili flakes 12 Teaspoon

  14. Hot sauce 14 Cup (4 tbs)

  1. Directions GETTING READY 1. Wash chicken with cold water and pat them dry using paper towel.

  2. Cut and separate them at the joints as shown in the video.

  3. MAKING For Aioli:

  4. In mortar and pestle, add garlic and salt. Grind well into a paste.

  5. Add egg yolk into the mortar and give it a whisk.

  6. Slowly add olive oil, whisking constantly.

  7. Add lime juice, and chipotle pepper. Mix well.

  8. Taste and season with salt. Transfer it to a bowl and set aside.

  9. For Fried Chicken:

  10. In a pan, heat oil until it reaches 350 degree F.

  11. Drop chicken pieces in hot oil and cook for 13-15 minutes. Transfer them to a paper towel to drain.

  12. . Into a bowl, place fried chicken and add cilantro, lime juice, salt, pepper, chili flakes, and hot sauce. Toss to coat well.

  13. SERVING 11. Serve hot with aioli and enjoy!
