  1. 4 pounds pumpkin

  2. 1 large pumpkin

  3. 1 pound beef

  4. 1 cup onion chopped

  5. 1 x vegetable oil

  6. 1/3 cup sweet red bell pepper

  7. 1/3 cup green bell pepper

  8. 1 clove garlic minced

  9. 1 teaspoon salt

  10. 1/4 teaspoon thyme

  11. 1/4 teaspoon black pepper

  12. 7 1/2 ounces olives pitted, ripe

  13. 8 ounces tomato sauce

  14. 2 large eggs beaten

  1. Cut top from pumpkin; scrape out seeds and fibers.

  2. Simmer in salted water to cover for 20 to 25 minutes or until almost tender.

  3. Drain.

  4. Brown beef and onion.

  5. Add peppers and garlic. Cook one minute.

  6. Remove from heat, stir in remaining ingredients.

  7. Spoon into pumpkin. Place on top.

  8. Brush pumpkin with oil.

  9. Bake at 350 degrees for 1 hour.

  10. Let stand 10 minutes.

  11. Cut into edges to serve.
