  1. for Veal Roll

  2. 1-1 1/3 lb (500-600 g) veal

  3. 100 g lard

  4. 4 eggs

  5. 1 onion

  6. 4 garlic cloves

  7. Parsley, cilantro, fennel to taste

  8. 50 g white bread

  9. 3 tablespoons milk

  10. 2 tablespoons flour

  11. 20 g capers

  12. Oregano, meat spices, salt to taste

  1. of Veal Roll Wash veal and cut into medium pieces.

  2. Peel and chop onion and garlic.

  3. Soak white bread in milk.

  4. Make hard-boiled eggs.

  5. Grind meat , lard , garlic and onion.

  6. Add soaked bread, two raw eggs, oregano, spices and salt to ground meat .

  7. Mix well, add flour and mix well again.

  8. Peel hard-boiled eggs and cut in halves.

  9. Chop greens finely.

  10. Spread ground meat on foil.

  11. Place line of chopped greens across the width of meat form and put capers over the greens.

  12. Then put four halves of eggs one after another.

  13. Add extra salt if needed; though remember that capers are salty.

  14. Then roll up in sausage fashion.

  15. Arrange roll on a baking sheet and unwrap the foil.

  16. Bake in a preheated oven at the medium temperature for 30 minutes.

  17. Bake until golden brown.

  18. Let cool to make cutting easier.
