  1. 1 lb lean pork ribs/pork loin

  2. 1 section of nagaimo/fresh wai san - peel and cut into slices

  3. 1/2 cabbage

  4. 8-10 dried pitted red dates

  5. 6 cups water

  6. Salt and pepper to taste.

  1. Wash pork ribs and have enough of water to cover the ribs.

  2. Bring to the boil for 5 minutes.

  3. Remove from heat and pour away the water.

  4. Wash the ribs with cold running water.

  5. Put ribs back to the soup pot and add 6 cups of water, sliced nagaimo, cabbage, pitted red dates(if using) and bring the soup to high boil.

  6. Then lower the heat and let soup simmer for 30 - 45 minutes .

  7. Add salt and pepper to taste.

  8. Serve hot.

  9. Serves
