  1. 3 ripe medium mangoes, seeds removed, peeled and coarsely chopped

  2. 1 large cucumber, peeled, seeded, coarsely chopped

  3. 2 jalapeños, seeded, finely chopped

  4. 1 small onion, finely chopped (1/4 cup)

  5. 1 clove garlic, finely chopped

  6. 1/4 cup chopped fresh cilantro

  7. 1 tablespoon lime juice

  8. 1/4 teaspoon salt

  9. 1/8 teaspoon pepper

  10. 18 oz tortilla chips (from two 12-oz bags)

  2. Cover; refrigerate at least 2 hours or overnight to allow flavors to blend. Serve with tortilla chips.
