  1. 4 5-ounce boneless pork loin chops, trimmed of fat

  2. 1/3 cup flour

  3. Pinch salt

  4. 2-3 twists freshly ground black pepper

  5. 1 clove garlic minced

  6. 2 tsp olive oil

  7. 1/3 cup balsamic vinegar

  8. 1/2 cup fat free, low sodium chicken broth

  1. Dredge each pork chop in flour mixture.

  2. Heat oil on medium heat in 12 inch skillet . Add garlic and cook gently for 1 minute. Add pork chops and cook for 4 minutes each side. Remove and place on a plate, then cover loosely with foil.

  3. Add balsamic vinegar and broth to skillet, stir to deglaze the pan. When liquid has reduced by half, return pork chops to the pan. Cook for 3-4 more minutes, turning once.
