  1. 3 tablespoons vegetable oil

  2. 4 each garlic cloves

  3. 1 large onion chopped

  4. 1 large carrot grated

  5. 1 each green bell pepper chopped

  6. 1 1/2 teaspoons basil dried

  7. 1 teaspoon fennel bulb ground

  8. 3/4 teaspoon oregano dried

  9. 2 large eggs

  10. 1 cup bread crumbs

  11. 3/4 cup walnuts chopped

  12. 1/4 cup parsley leaves fresh

  13. 2 tablespoons dijon mustard

  14. 1 1/2 tablespoons sesame oil

  15. 1 tablespoon soy sauce, tamari

  16. 3 each tofu cakes*

  1. Preheat oven to 350 degrees F.

  2. Saute the garlic, onion, carrot, pepper, basil, fennel and oregano in the oil for 10 minutes or until tender.

  3. In a large bowl, beat the eggs, then add all other ingredients except the tofu.

  4. Mash the tofu and add it to the other ingredients. Mix well.

  5. Form the mixture into 1 1/2-inch balls.

  6. Spread on a greased baking sheet.

  7. Bake for 20-30 minutes at 350 degrees F. or until golden brown.
