  1. 24 raw king prawns

  2. 1 tablespoon olive oil

  3. sea salt and cracked black pepper, to taste

  4. 1 1/2 tablespoon store-bought pesto

  5. cup whole-egg mayonnaise

  6. lemon wedges, to serve

  1. Remove the shells from the prawns, keeping the tails intact. Toss with the olive oil, salt and pepper.

  2. Thread each prawn onto a bamboo skewer and grill or barbecue until golden and cooked through.

  3. While the prawns are cooking, mix together the pesto and mayonnaise.

  4. Serve the prawns warm with the pesto aioli and lemon wedges.
