  1. 1/2 teaspoon 2 1/2ml Onion powder

  2. 1/2 teaspoon 2 1/2ml Garlic powder

  3. 1/2 teaspoon 2 1/2ml Chili powder

  4. 1/2 teaspoon 2 1/2ml Paprika

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1/4 teaspoon 1 1/3ml Freshly-ground black pepper

  7. 3 teaspoons 15ml Russet potatoes - washed well (large)

  8. (or other potatoes of choice)

  9. 2 tablespoons 30ml Olive oil - divided

  1. Line a cookie sheet with a piece of parchment paper and set aside. In a small bowl, place the onion powder, garlic powder, chili powder, paprika, salt, and black pepper, and stir well to combine.

  2. Cut the potatoes into thin sticks or "french fries" (or wedges) and place them in a large bowl. Drizzle the olive oil over the top and toss the potatoes well to thoroughly coat them with the olive oil. Sprinkle the seasoning mixture over the potatoes and toss them well again to evenly coat the potatoes with the seasonings.

  3. Transfer the potatoes to the parchment-lined cookie sheet and spread out to form a single layer. Bake the potatoes at 450 degrees for 10 minutes. Remove the cookie sheet from the oven, stir the potatoes and then spread them out into a single layer again, return them to the oven, and bake an additional 10 minutes.

  4. Repeat the stirring and spreading out procedure again, return the cookie sheet to the oven, and bake an additional 10 to 15 minutes or until the potatoes are lightly browned and crispy. Serve hot.

  5. This recipe yields 4 to 6 servings.
