  1. 4 1/2 pounds ground top sirloin

  2. 1 white onion (minced)

  3. 1/4 teaspoon salt

  4. 1/4 teaspoon black pepper

  5. 2 eggs

  6. 1 1/4 cups ketchup

  7. 1 1/2 cups bread crumbs

  8. Butter and flour roux

  9. 1 litre beef demi glace

  10. 1 tablespoon peppercorn mix

  11. 10 pounds Yukon gold potatoes

  12. 1 tablespoon salt (for water)

  13. 1/2 cup margarine

  14. 1/2 cup garlic butter

  15. 1 cup milk

  16. 1/2 teaspoon salt

  17. 1/2 teaspoon pepper

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Place all ingredients in large bowl and mix very well.

  3. Hand form meatloaf mixture into long loaf pan, ensuring a uniform size with no “cracks” making a nice smooth top.

  4. Place loaf pan into baking pan and fill baking pan half way with water. (This will help keep an even cooking temperature during baking).

  5. Place in preheated oven and bake until loaf reaches an internal temperature of 160 degrees Fahrenheit (approximately 1 hour and 20 minutes).

  6. Remove cooked loaf from water bath and let cool in refrigerator.

  7. Using a knife, trace outside of loaf in pan.

  8. VERY carefully turn pan over and rest loaf on clean cutting board.

  9. Grill meatloaf on char broiler.

  10. VERY carefully slice meatloaf into ¾ inch slices.

  11. Place ½ cup of roux in sauce pot and cook on low heat until heated throughout.

  12. Add beef demi and peppercorn mix and simmer on low until gravy has nice consistency and flour flavour has been cooked out. (Add additional beef demi if needed.)

  13. Leaving skin on, chop Yukon gold potatoes in approximately 1.5-inch square filling a large stock pot.

  14. Fill pot with hot water covering potatoes seasoning water lightly with 1 tablespoon of salt.

  15. Bring water to a boil and cook potatoes until thoroughly done.

  16. Remove from heat and strain potatoes.

  17. Add margarine, garlic butter, milk, salt and pepper and mash well.

  18. Allow mashed potatoes to cool before portioning.

  19. Place 2 slices of meatloaf on a plate with sauteed onions and mushrooms on top. Scoop mashed potatoes on the side and drizzle the peppercorn demi glace on the entire plate.
