  1. 11/3 cup All-purpose flour

  2. cup Unsweetened cocoa powder

  3. 1 1/2 teaspoon Baking powder

  4. 1 1/2 teaspoon Baking soda

  5. 2 teaspoons Salt

  6. cup Packed dark brown sugar

  7. cup Cinnamon applesauce

  8. 1 Egg

  9. 1 Egg white

  10. 1 tablespoon Oil

  11. 1 teaspoon Vanilla extract

  12. cup Skim milk

  13. Powdered sugar, optional

  1. Preheat oven to 350F. Line 12 muffin cups with paper liners. Combine flour, cocoa, baking powder, soda and salt. Beat the next six ingredients until combined, about 1 minute. Stir in flour mixture alternately with milk until just combined. Pour batter into muffin cups. Bake 22-25 minutes or until toothpick comes out clean. Remove cupcakes from pan; cool on wire rack 30 minutes. Sprinkle with sugar, if desired. from Woman's World November 28, 1995
