  1. 1 tablespoon peanut oil*

  2. 1 tablespoon red curry paste

  3. 1/2 cup coconut milk

  4. 3 tablespoons fish sauce

  5. 2 tablespoons lime juice

  6. 1/4 cup peanut butter

  7. 1/2 cup water

  8. 2 tablespoons soy sauce

  9. 2 tablespoons rice vinegar

  10. 2 tablespoons brown sugar

  11. 1 tablespoon chili sauce (or to taste)

  12. 2 teaspoons garlic, grated

  13. 2 teaspoons ginger, grated

  14. 2 tablespoons peanuts roasted and chopped

  1. Heat the oil in a pan over medium heat, add the curry and saute until fragrant, about a minute.

  2. Add everything else and simmer to thicken it a bit, about 2-3 minutes.

  3. Mix everything in a sauce pan over medium heat until well combined.
