  2. 2 1/2 pounds beef chuck roast

  3. 1 tsp. meat tenderizer

  4. 1 1/4 cups soy sauce

  5. 1/4 cup brown sugar

  6. 1 tbsp. lemon juice

  7. 1/4 cup bourbon

  8. 1 tsp. Worcestershire sauce

  9. 1 1/2 cups water

  10. 2 cloves garlic, peeled and crushed

  1. Sprinkle roast with meat tenderizer. Stir together soy sauce, brown sugar, lemon juice, bourbon, Worcestershire, water and garlic in a large bowl. Add chuck roast and turn to coat. Cover and refrigerate roast at least 6 hours or overnight, turning once.

  2. Preheat broiler. Remove the roast from the marinade and transfer to a broiler pan. Broil roast about 5 inches from the heat for about 30 minutes per side. Transfer roast to a serving plate. Cover and let stand 5 minutes before slicing and serving.
