  1. 6 cloves garlic, mashed into a paste

  2. pinch of salt

  3. 1/2 cup mayonnaise

  4. 2 tbsp olive oil

  5. pinch of freshly ground black pepper

  6. 1 loaf French baguette

  7. 1/2 cup grated Parmesan

  8. 1/4 cup chopped fresh Italian parsley

  1. Mince and then mash the garlic with a pinch of salt on a cutting board with the flat of a knife. Keep mashing until the garlic is a fine paste. Add to a small bowl with the mayo, olive oil, and pinch of pepper. Stir well and let sit in the fridge for 1 hour to develop the full flavor.

  2. Preheat oven to 400 degrees F.

  3. Cut the baguette in half lengthwise. Lay the bread, cut side up on a baking sheet. Spread the garlic mayo evenly on the 2 pieces of bread. Sprinkle the cheese evenly over the bread. Bake for 10-15 minutes, or until the garlic bread is golden brown and the cheese is bubbling. Remove, let cool for 10 minutes, cut in smaller pieces, and serve warm sprinkled with the chopped parsley.
