  1. 1 cup unbleached all-purpose flour

  2. 1/4 cup cocoa powder

  3. 1 teaspoon baking powder

  4. 1/2 teaspoon baking soda

  5. 1/4 teaspoon salt

  6. 1 cup plain rice or soy milk

  7. 1/4 cup canola oil

  8. 1/2 cup pure maple syrup

  9. 1/4 cup sugar

  10. 1 teaspoon apple cider vinegar

  11. 1 teaspoon vanilla extract

  12. Cream Filling:

  13. 4 cups confectioners sugar

  14. 1 cup shortening

  15. 2 tablespoons water

  16. 1 teaspoon vanilla

  17. Ganache Frosting:

  18. 1/3 cup soy milk

  19. 4 ounces bittersweet chocolate , chopped

  20. 2 tablespoons pure maple syrup

  1. Preheat oven to 350 degrees F.

  2. Line a 12 muffin tin with paper liners In a medium size mixing bowl, sift together flour, cocoa, baking powder, baking soda, and salt.

  3. In a large mixing bowl combine rice milk, oil, maple syrup, sugar, vinegar and vanilla Beat at medium speed with electric mixer for 2 minutes.

  4. Add dry ingredients to the wet in two batches, beat until all comes together.

  5. Use ice cream scoop to fill the cupcake liner three-quarters full.

  6. Bake for 28 minutes.

  7. Cool on wire rack.

  8. Cream Filling:

  9. Mix all ingredients together beat until smooth.

  10. Put in pastry bag fitted with large star tip.

  11. Ganache Frosting:

  12. In a small saucepan scorch the soy milk(bring to a boil), then lower heat to simmer.

  13. Add chocolate and maple syrup.

  14. Mix with heat proof spatuala until smooth about 30 seconds.

  15. Turn off heat and set aside.

  16. Time to put them together!

  17. Poke a hole in the middle of the cupcake. I usually take the end of a sharpie that I wash but you can use your finger or anything you can find that is sanitary.

  18. Insert the star tip into the hole and squeeze the bag until the bag lifts itself out of the cupcake.

  19. Once all the cupcakes are done with the filling dip them into the ganache.

  20. Put them in the fridge to set and your all ready to eat!
