  1. 100g caster sugar

  2. 110g unsalted butter

  3. 1 egg

  4. 350g black treacle

  5. 310g plain flour

  6. 1 1/2 teaspoons bicarbonate of soda

  7. 1/2 teaspoon salt

  8. 1 teaspoon ground cinnamon

  9. 1 teaspoon ground ginger

  10. 1/2 teaspoon ground cloves

  11. 250ml hot water

  1. Preheat oven to 180 C / Gas 4. Greased and flour one 23cm square tin.

  2. Cream together the sugar and butter. Add egg and beat well. Mix in the black treacle.

  3. Sieve together the flour, bicarbonate of soda, salt, cinnamon, ginger and cloves. Add dry ingredients to the creamed mixture; add the hot water and mix well.

  4. Pour batter into tin and bake for one hour. Allow to cool in tin and serve.
