  1. 1 1/4 cups 78g / 2.8oz All-purpose flour

  2. 2 tablespoons 30ml Sugar

  3. 1 teaspoon 5ml Baking soda

  4. 3/4 teaspoon 3.8ml Baking powder

  5. 1/4 teaspoon 1 1/3ml Salt

  6. 1 Egg

  7. 3/4 cup 177ml Milk

  8. Corn oil (about 1 quart)

  9. Confectioners' sugar

  1. Sift together the first five ingredients.

  2. Mix egg and milk; add to flour mixture. Stir until batter is smooth. Pour oil into deep skillet to depth of 1-inch (fill pan no more than 1/3 full).

  3. Heat over medium heat to 375F.

  4. Holding forefinger over end of funnel, pour 1/4 cup batter into funnel. Place funnel over hot oil, then remove finger to let batter flow. As batter flows, move funnel in circles to form a spiral cake.

  5. Fry, turning once, 2 minutes or until golden brown. Drain and sprinkle with confectioners' sugar. Repeat. Makes enough for 6 funnel cakes.
