  3. 1/2 cup grated cheese

  4. 1 tablespoon vegetable shortening

  5. 2 eggs

  6. Salt, pepper and red pepper

  7. 1/2 cup milk

  1. Instructions Melt vegetable shortening, add flour, then milk gradually.

  2. Stir till they boil, cool a little, add cheese and yolks and seasonings.

  3. Fold in whites stiffly beaten.

  4. Pour into a vegetable shorteninged souffle tin.

  5. Bake 20 minutes in hot oven.

  6. Fold a napkin round and serve hot.
