  1. 250g pumpkin puree

  2. 200g caster sugar

  3. 125ml vegetable oil

  4. 1 egg

  5. 250g plain flour

  6. 2 teaspoons baking powder

  7. 2 teaspoons ground cinnamon

  8. 1/2 teaspoon salt

  9. 1 teaspoon bicarbonate of soda

  10. 1 teaspoon milk

  11. 1 tablespoon vanilla extract

  12. 325g chocolate chips

  13. 60g chopped walnuts

  1. Combine pumpkin, sugar, vegetable oil and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon and salt. Dissolve the bicarb with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.

  2. Fold in vanilla, chocolate chips and nuts.

  3. Drop by spoonfuls on greased baking tray and bake at 180 C / Gas 4 for approximately 10 minutes or until lightly brown and firm.
