  1. 1 1/2 cups buttermilk

  2. 1/3 cup cream of wheat

  3. 1/3 cup sugar

  4. 1 1/4 cups flour

  5. 1 teaspoon baking powder

  6. 1 teaspoon baking soda

  7. 1/2 teaspoon salt

  8. 1/4 cup oil (olive oil is fine)

  9. 1 egg

  10. 1 teaspoon vanilla

  1. Mix buttermilk and cream of wheat together.

  2. Stir in baking soda.

  3. Beat egg, oil, vanilla, sugar, and salt (if using) together.

  4. Whisk in buttermilk mixture.

  5. Stir in flour and baking powder. If batter is too thick you may add additional buttermilk.

  6. Spoon about 1/4 cup batter per griddle cake on hot grill or cast iron frying pan.

  7. Cook till golden, flip and continue cooking.

  8. Keep warm in oven while preparing the rest of the griddlecakes.

  9. Serve hot with choice of toppings.
