  1. 8 ounces imitation crab - shredded or chopped

  2. 1 cup shredded low fat cheddar jack cheese

  3. 1/2 cup onion - chopped fine

  4. 1 cup egg beaters - southwestern is best

  5. 1 cup fat free evaporated skim milk

  6. 1/8 teaspoon each salt & pepper

  7. 1/2 teaspoon dry mustard

  8. Dash of paprika

  1. Preheat oven to 400 degrees (375 for glass plate). Spray a 9" pie plate with non-stick spray. Combine shredded crab, onion and cheese. Press into the prepared pie plate forming the crust. Beat together the remaining ingredients and pour onto crust. Sprinkle with paprika. Bake approximately 30 minutes or until toothpick inserted comes clean. Yield: serves 4 Notes: Additional veggies may also be added to for extra nutrition. I like to add green and red bell peppers for color or chopped spinach.
