  1. 300g (10oz) plain flour

  2. A pinch of salt

  3. 15g (2/3oz) baking powder

  4. tsp mixed spice

  5. 150g (5oz) shredded suet

  6. 100g (4oz) soft brown sugar

  7. 150g (5oz) currants

  8. Finely grated zest of 1 lemon

  9. 250-300ml (9-10fl oz) milk

  10. 5tbsp golden syrup

  11. 1tbsp black treacle

  12. Fresh custard, vanilla ice cream or knob of butter

  1. Sift the flour, salt, baking power and mixed spice together into a large bowl.

  2. Stir in the suet, sugar, currants and lemon zest and then pour in 250ml (9fl oz) milk, adding a little more if necessary to create a soft dough.

  3. On a lightly floured surface, roll the dough into a cylinder 20-30cm (8-12 inches) long. Loosely wrap it in buttered clingfilm or greaseproof paper. It can now be rolled in a clean tea towel or muslin and tied with string at both ends to secure.

  4. Steam over rapidly simmering water for 2 hrs, topping up with hot water from the kettle, if necessary.

  5. Meanwhile, warm together the golden syrup and black treacle (the black treacle creates the caramel flavour in the syrup).

  6. Slice the spotted dick, pour over the caramel golden syrup and serve with fresh custard, vanilla ice cream or a knob of butter to melt on top
