  1. 2 cups couscous

  2. 2 cups boiling water

  3. 2 tablespoons lemon juice

  4. 2 teaspoons finely grated lemon rind

  5. 4 egg tomatoes, seeded, finely chopped

  6. 1/2 cup coarsely chopped fresh parsley

  7. 1/2 cup coarsely chopped fresh mint

  8. 1 small red onion, finely chopped

  9. 12 falafel balls

  10. mountain or lebanese bread to serve

  11. Hummus dressing

  12. 1/2 cup hummus

  13. 1/2 cup natural yogurt

  1. Place couscous in a large bowl. Pour over combined water, lemon juice and rind. Cover with plastic wrap. Stand for 5 minutes.

  2. Fluff couscous with a fork. Stir through tomatoes, herbs and onion. Season to taste.

  3. Hummus dressing: in a jug, combine hummus and yogurt. Season to taste.

  4. Serve couscous topped with falafel balls and dressing on bread of choice.

  5. Top tips Falafel can be purchased from some delicatessens and most kebab shops. Or you can make them yourself from a packet mix.
