  1. 2lbs mixed greens

  2. 2 bell peppers , chopped

  3. 1-4 fresh jalapenos , chopped

  4. 3-4 green onions , chopped

  5. 2-3 meaty tomatoes , chopped

  6. 2-3 cups cooked black beans (drained if using canned)

  7. 2-3 cups frozen kernel corn off the cob, thawed but not cooked

  8. 1/4 cup sliced gourmet green olives

  9. Fried tortilla strips(if desired)

  10. 1 cup freshly shredded pepper jack cheese (if desired)

  11. Creamy avocado cilantro Dressing( Creamy avocado cilantro Dressing )

  12. For Grilled Salmon

  13. 4-6oz salmon fillets

  14. Tajin, Latin, Cajun or creole seasoning , as desired

  15. fresh lime juice

  1. Grill salmon with the preferred seasoning and lime juice. Set aside.

  2. Arrange salad with the mixed greens, peppers, onion, tomato, beans and olives and lightly toss.

  3. Shred the salmon in large bite sized pieces and add that to the top of the salad with the tortilla strips, cheese and dressing.
