  1. Iceberg lettuce head 1 (This Type Works Best For This Recipe)

  2. Garlic 3 Clove (15 gm) , minced

  3. Galangal/Ginger 1 Inch , grated (Thumb-Size)

  4. Red chili 1 , finely sliced (Deseeded, Omit Altogether If You Prefer Very Mild Wraps)

  5. Shallots 2 , finely sliced

  6. Cooked chicken 12 Cup (8 tbs) , sliced lengthwise into matchstick-like pieces

  7. Carrot 1 , grated or cut into thin strips

  8. Shiitake mushrooms 5 , thinly sliced

  9. Egg 1

  10. Shredded cabbage 12 Cup (8 tbs) (Red Is Very Good, But Any Type Will Work)

  11. Spring onions 3 , sliced lengthwise into matchstick-like pieces

  12. Bean sprouts 2 Cup (32 tbs)

  13. Lime juice 2 Tablespoon

  14. Soy sauce 2 Tablespoon

  15. Fish sauce 2 Tablespoon

  16. Oyster sauce 1 Tablespoon

  17. Fresh basil 1 Cup (16 tbs) , roughly chopped if leaves are large

  18. Dry roasted peanuts 12 Cup (8 tbs) , roughly chopped

  19. Oil 2 Tablespoon (For Stir-Frying)

  1. Directions Place oil in a wok or large frying pan over medium-high heat. Add garlic, galangal (or ginger), chilli, and shallots. Stir-fry one minute, or until fragrant. Stir-frying tip: add a Tbsp. water whenever the wok/pan gets too dry instead of more oil.

  2. Add chicken, carrot, shiitake mushrooms, cabbage, and spring onionsAs you stir-fry, add the lime juice, soy sauce, fish sauce, and oyster sauce. Stir-fry about 1 minute.

  3. Push ingredients to the side of the wok or pan, and crack in the egg. Stir-fry the egg quickly, breaking the yolk. Mix in with the other ingredients.

  4. Add the bean sprouts and stir-fry briefly (to mix). Remove from heat and do a taste test for salt, adding 1 Tbsp more fish sauce if not salty enough.

  5. Cut off the stem part of the iceburg lettuce so it's easier to separate the leaves. Now place the lettuce, the sir-fried filling, and the toppings on your table, allowing family or guests to make their own wraps.

  6. To assemble wraps, take a whole lettuce leaf and place 1-2 heaping tablespoons of filling in the center. Top with a sprinkling of fresh basil and peanuts. Then wrap it up and eat. (For those who like it extra spicy, Thai chilli sauce can be added as another topping.)
