  1. 5 pork loin chops

  2. 2 teaspoons oil

  3. 1 onion

  4. 1 stem lemon grass, finely chopped

  5. 2 green shallots, finely chopped

  6. 3 tablespoons oil, extra

  7. 1 tablespoon fish sauce

  8. 1/2 teaspoons sugar

  10. 1/2 teaspoons sambal oelek

  11. 1 teaspoon cornflour

  12. 1 tablespoon water

  13. 1 tablespoon unsalted roasted peanuts, chopped

  1. Remove rind and excess fat from chops, slice pork thinly, combine with oil. Cut onion in half, then into thin wedges. Place shallots in bowl. Heat extra oil in wok, spoon 1 tablespoon of the hot oil over shallots in bowl. Add onion to remaining oil in wok, stir-fry 1 minute. Add pork, stir-fry until pork is tender. Add lemon grass, fish sauce, sugar, sambal oelek, blended cornflour and water. Stir-fry over high heat until mixture boils and thickens. Spoon pork mixture onto plate, top with shallot mixture, sprinkle with peanuts.

  2. Serves 6.
