  1. 1 lb lean ground beef

  2. 1/2 cup chopped onion

  3. 1 clove garlic , finely chopped

  4. 1 cup pearl barley

  5. 4 slices bacon , diced

  6. 3 cups tomato juice

  7. 1/2 teaspoon salt

  8. 1/8 teaspoon ground black pepper

  9. 3 -4 cups sliced green cabbage

  10. 2 teaspoons caraway seeds

  11. 1 cup shredded cheddar cheese

  1. Preheat oven to 350F.

  2. Saute beef, onions, and garlic in a large saucepan over medium heat.

  3. Pour off grease.

  4. Add barley and bacon; sauté 2 to 3 minutes.

  5. Stir in tomato juice, salt and pepper and bring to a low boil.

  6. Reduce heat, cover and simmer 30 minutes.

  7. Stir in cabbage and caraway seeds.

  8. Spoon mixture into 2-quart casserole.

  9. Bake for 30 minutes.

  10. Sprinkle with cheese and bake 5 minutes longer or until cheese melts.

  11. Makes 6 servings.
