  1. Ingredients (serves 4)

  2. 24 Pacific oysters, in half shell

  3. 2 medium, ripe tomatoes, halved, deseeded, chopped

  4. 2 green shallots, ends trimmed, finely chopped

  5. 85g (1/3 cup) THOMY Delikatess Mayonnaise

  6. 1 tbs fresh lemon juice

  7. 1 tbs water

  8. 1 garlic clove, crushed

  9. Pinch of salt

  1. Arrange oysters on a serving platter.

  2. Combine tomato and shallot in a medium bowl. Top each oyster with a little of the tomato mixture.

  3. Place mayonnaise, lemon juice, water and garlic in a jug. Stir until well combined. Season with salt.

  4. Spoon lemon dressing over oysters and serve
